Cauliflower transforms itself into a grain free and low-carb “rice” side that when combined with fresh herbs adds a nice lightness to the spiciness of the meatballs. This entire meal comes together in under an hour and requires very little ingredients making it a great option for busy nights!

 

Ingredients

Serves 3

For the meatballs

500g lean beef mince

2 spring onions, chopped finely

1 clove of garlic, minced

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon coriander

½ teaspoon ground black pepper

½ teaspoon salt

 

For the Herby Cauliflower Rice

1 head of cauliflower

1 tablespoon olive oil

1 cup mixed fresh herbs (I used a mix of chives, mint and parsley)

Salt and pepper to taste

 

Directions

For the Meatballs:

Preheat your oven to 200°C / 400°F and line or oil a baking tray.

Combine all the meatball ingredients in a large mixing ball and mix until fully combined.

Divide the mince into 24 meatballs (about 1 ½ tablespoons in size) and place them in the baking pan.

Cook for 20-25 minutes until fully cooked through and nicely browned on the outside.

 

For the Herby Cauliflower Rice

Wash the cauliflower and cut it into small pieces.

Place the pieces into a food processor and blend for about 30 seconds until the cauliflower resembles rice / couscous.

Heat 1 tablespoon of olive oil in a large frying pan over a medium heat

Add the cauliflower rice and cook for about 5 minutes, stirring constantly. You want the cauliflower to soften and have a few crisp browned pieces in it.

Turn of the heat and add the herbs and salt and pepper to season.
